About research: Fruitorin is a condiment in the same category as mirin, the rice wine used as a condiment in Japanese cuisine. However, Fruitorin is produced via fruit juice fermentation, and this allows for a greater variety and formulations to be produced than rice wines like mirin. The products can be used as cooking wine, salad dressing, flavor enhancer and food coloring in many savory dishes and desserts. Moreover, specific Fruitorin formulations can be used to marinate meats, where it functions as a meat tenderizer and flavor enhancer. Since the raw materials of these products are diverse and abundant and the processing technology is relatively simplified, then new products in this production line can be continuously developed.
