The award-winning research, titled “Impact of Non-Thermal Plasma and Enzymatic Treatments on Cooking Quality, Glycemic Index, and Bioactive Compounds of Brown Rice,” focuses on improving the quality of brown rice by investigating the application of non-thermal plasma technology and comparing its effects with those of enzymatic treatment. The study examines how these approaches influence cooking quality, glycemic index, and the preservation of bioactive compounds. The research was conducted under the supervision of Assoc. Prof. Dr. Jirarat Anuntagool, the principal advisor, and forms part of a collaborative research project with Dr. Rattanawan Jansasitorn of the Thailand Rice Science Institute.

The competition was held as part of the Food Innovation Asia Conference 2026 (FIAC 2026), which was organized under the theme “Transforming Food Systems: Integrating Science, Technology, and Tradition for Global Well-Being” this year. The conference was jointly organized by the Agro-Industry Academic Council Association (AIAC) and the Food Science and Technology Association of Thailand (FoSTAT), in collaboration with a network of leading academic institutions and food industry organizations. The FIAC is recognized as one of Asia’s leading academic conferences, serving as a key platform for advancing research and innovation in food science and technology. It brings together researchers, faculty members, and students from across the region to exchange knowledge and foster collaboration in support of the sustainable development of the food industry.
