[The Herald Business] 쭐랄롱꼰, 획기적인 아르토 자당 저감 기술 개발 – 과일 당 함량 65% 줄이고 프리바이오틱스로 전환

쭐랄롱꼰 대학교(Chulalongkorn University) 이학부 생화학과 및 분자작물 우수 센터Center of Excellence in Molecular Crop)의 교수 수파아르트 시리칸타라마스 박사(Dr. Supaart Sirikantaramas)가 과일 자당을 프리바이오틱스로 전환하는 획기적인 효소 기반 기술, 아르토 자당 저감 기술(Arto Sucrose-Reduced Technology)을 개발했다. 이 기술은 과일 속 당 함량을 최대 65%까지 줄이면서도 필수 영양소는 그대로 보존할 수 있어, 두리안, 망고, 바나나 등 당도가 높은 과일을 더욱 건강하게 섭취할 수 있도록 돕는다.
